High Protein Granola

Ingredients: High Protein Granola 

  • 2 cups rolls oats 
  • 2 scoops Ascent Vanilla Vegan Protein 
  • 1/2 cup creamy peanut butter
  • 1/3 cup maple syrup or honey
  • 1/3 cup coconut oil, melted
  • 1 cup mix-ins of choice, we used pumpkin seeds and cherries 

Directions: High Protein Granola 

  • Preheat the oven to 350*F and line a large baking tray with parchment paper. 
  • In a large mixing bowl, add the oats and protein powder and mix well. 
  • In a small bowl, whisk together the peanut butter, syrup and coconut oil. 
  • Add the wet ingredients into the dry ingredients and mix well, until fully incorporated. 
  • Transfer the protein granola mixture onto the lined baking tray and spread out in an even layer. Place the baking tray in the oven and bake for 22-25 minutes, stirring the granola halfway through. 
  • Remove the granola from the oven and mix once more, before letting it cool completely. Once it reaches room temperature, transfer into a large mixing bowl and add your mix-ins of choice. 
  • Store in an air-tight container and enjoy over casein pudding, yogurt, or as a snack while you're on the go!
