Ali Riley's Apple Cinnamon Baked PROatmeal

Ingredients: Apple Cinnamon Baked PROatmeal from Ascent Athlete Ali Riley

  • 2 medium apples (Ali's favorite is honeycrisp) 
  • 2 1/2 cups old-fashioned rolled oats 
  • 1/2 cup Ascent Vanilla Plant-Based Protein 
  • 2 tsp ground cinnamon 
  • 1 pinch table salt 
  •  2 cups plant-based milk 
  • 1/2 cup unsweetened applesauce 
  • 1/2 tsp pure vanilla extract 
  • 1/4 cup maple syrup, optional 
  • Additional plant-based milk and maple syrup, for serving 


Directions: Apple Cinnamon Baked PROatmeal from Ascent Athlete Ali Riley 

  • Preheat oven to 350*F. 
  • Core your apples & dice them into 1/2-inch cubes.
  • Place the oats, protein powder, cinnamon, and salt into a 8x8 greased baking dish. Mix with a fork until combined. Add the milk, applesauce, vanilla and maple syrup, if using. Stir to combine all of the dry ingredients with the wet ingredients. Stir in the apple. 
  • Back for about 35 minutes, until firm to the touch. 
  • Serve immediately by scooping out desired portions and adding milk and syrup to your liking. 
  • If not consuming immediately, allow the PROatmeal to cool completely before cutting into bars. Store the bars in the refrigerator in an airtight container or resealable bag for up to 5 days. Enjoy cold or reheated in the microwave, checking on it every 15 seconds until it reaches desired temperature.
