Ingredients: Mini Protein Pancake Bites
- 1 cup pancake mix of your choice
- 1 1/2 scoop Ascent Chocolate Whey Protein
- 1 egg
- 3/4 cup milk or half/half
- 1 tablespoon maple syrup
- Chocolate chips to top, optional
Directions: Mini Protein Pancake Bites
- Preheat the oven to 350*F. Lightly grease 24 wells of a mini muffin pan.
- In a medium bowl, whisk together the egg and milk. Add the pancake mix and protein powder, whisking until combined.
- Stir the maple syrup into the batter. Scoop a heaping tablespoon of batter into each of the prepared wells and top each bite with a few chocolate chips, if desired.
- Bake the bites for 8 to 11 minutes, until the centers are just set; they won't turn golden brown.
- Remove the bites from the oven and let them cool in the pan until you can comfortably transfer them to a rack to cool.
- Serve pancake bites warm or at room temperature, with our without maple syrup for dipping.
Notes: Optional toppings - jam, vegan cream cheese, fresh fruit, toasted coconut, nutella, chopped nuts, and more!
