Ingredients: Double Chocolate Fudge Casein Protein Brownies
- 1 can black beans, drained and rinsed well
- ½ cup + 2 tbsp. unsweetened cocoa powder
- 3/4 cup white/whole wheat flour (oat flour or gluten free)
- 2 scoops Ascent Chocolate Micellar Casein Protein
- ½ cup Vanilla Greek yogurt
- 3 whole eggs
- 1/2 cup coconut oil, melted
- 1/2 cup + 2 tbsp. honey
- 1/4 cup milk ( I used unsweetened almond)
- 2-4 tbsp. coconut sugar (depending on how sweet you like it)
- 1/4 cup semi-sweet chocolate chips, melted
- 1 tsp. baking powder
- ½ tsp. salt
Instructions: Double Chocolate Fudge Casein Protein Brownies
- Add black beans, Greek yogurt, eggs, melted coconut oil, honey, milk, coconut sugar, and melted chocolate to food processor.
- Blend until completely smooth.
- Next add the dry ingredients: cocoa powder, flour, protein powder, baking powder and salt.
- Blend/process again until smooth.
- Add chocolate chips and pulse a few times to incorporate.
- Line a 9x9 glass baking dish with foil.
- Spray with nonstick baking spray.
- Pour batter into baking dish and spread evenly into the dish.
- Sprinkle with some chocolate chips on top if desired.
- Bake at 350F for 20-25 minutes.
Be careful not to over-bake!
